Day Off.

 Today was one of those days where you wake up full of the greatest intentions and all of a sudden, you have 3 hours of computer time logged, 2 pots of coffee down , breakfast and several snacks served, a half dozen small disasters dealt with, the smallest child mostly entertained, and still not a damn thing actually done. I was up at 7:00, it was already 1:00. Pretty sure that per my original schedule I should already have had the house clean, dishes done, laundry folded, errands run, a healthy meal made and a poignant blog post written about the whole experience. By this time I should have been hanging out with Finn spending some quality time discussing the social implications of all of his favorite female characters from Roald Dahl books. Ok, probably not. But at the very least, we should have been building some sort of monstrous Lego battle vehicle by now. Ready to lay waste to a very clean playroom. Given that we were both still in our underwear, and the only quality time we had spent thus far was an hour long debate where Finn tried to explain why eating an Ice Cream Sandwich in between breakfast and lunch was a perfectly acceptable (and healthy, he added) practice. I was, as they say, "in the weeds". In an attempt to rally from my current state I promptly clothed myself and went into the kitchen to check the state of our kitchen and its contents. It dawned on me that something else on my list of things not getting done was grocery shopping. Because, well, we ain't got no food! I scoured the cabinets for something we could make that required minimal ingredients. We always have onions and potatoes, we actually have more than two eggs in the fridge. Aha! "Hey Finn, how about we make a Tortilla?!" "Don't we already have some of dem in da fwidge? Put wots of cheese on mine". "No not that kind of Tortilla. It's........nevermind. You will like it". By this point cooking with Dad had lost its luster. He had moved on to building the apocalypse by himself. I knew once it came time to crack eggs and add spices he'd be back. And he was. The rest of the day pretty much followed suit with the morning. We ate our lunch and decided to venture out to try to find a Creepy Santa or two for L's collection. We were moderately successful after lots of aimless driving and wandering up and down the aisles of thrift. The ladies kept asking us if we had lost someone. We must have looked totally insane. Oh, well. The day is over. My beer is cold. This post is done. Here's a recipe. Enjoy.

4 Medium sized waxy potatoes, peeled
 1 Medium onion, sliced thin
 6 Eggs
S/P

 Cover Potatoes with cold water. Bring to a boil. Cook until easily pierced with a fork.
Cut into large cubes and set aside. While potatoes are cooking, add 3-4 Tbl. Olive oil and onions to an oven safe skillet. I prefer cast iron. Cook over medium high heat until they begin to brown. Add the potato to the pan and stir to combine. Season with S/P and whatever else you feel like. Finn added garlic and "dat red stuff" a.k.a Paprika. Continue cooking until potatoes have also started to brown. Whisk eggs in a bowl, add them to the onions and potatoes covering the whole pan. Cook until bottom has set and starts to brown. Transfer the the pa to the broiler to finish cooking the top. If you don't have a broiler. You can go the traditional route and carefully turn the tortilla out on a plate and transfer back into the pan to finish cooking. Once tortilla is cooked through, turn it out on a plate. Serve warm or at room temp with cilantro oil.

Cilantro Oil
2 Cups Cilantro, chopped
3/4 cup Extra virgin olive oil.
2 cloves garlic
1 medium jalapeno (optional)
1 Tbl. white wine vinegar
 S/P tt
  
Combine all ingredients in blender or food processor. Blend until smooth.

I was supposed to tell you all about a few really exciting things we have in the works. But this beer isn't going to drink itself and now I will have something to tell you about tomorrow.
