corn + zucchini + feta salad

  This past weekend was busy, busy.  There were cookouts and tasty indiscretions.  We decided that at least one of our contributions should be of the healthy-no-meats-or mayo variety.  This is what we came up with.  It is fresh, easy to put together, and doesn't make you feel bad about yourself.  It's the perfect summertime appetizer.


corn + zucchini + feta salad 

  • 1 1/2 cup corn, raw
  •  1 1/2 cup zucchini, chopped
  • 2 teaspoon kosher
  • 1/2 cup green onion
  • 1/2 cup flat leaf parsley, finely chopped
  • 1cup spring mix greens, finely chopped
  • 1 tablespoon fresh dill, chopped
  • 1/2 cup feta
  • zest of 1 lemon
  • 1 tablespoon white balsamic vinegar
  • small sweet peppers, halved for serving
Combine corn, and zucchini in a mixing bowl and toss with salt. Let sit for 30 minutes. Rinse and dry.
Combine corn, zucchini, green onion, parsley, greens, dill and feta in a bowl.   Add balsamic vinegar, and lemon zest.
Fill halved peppers and serve.
