sweet potato pie + gingersnap brown butter crust


I don't really know what to say here. We all know that food can cure a lot of things. It can make you nostalgic, and dredge up lost memories. It can heal you in ways that modern medicine cannot. Often, it is a direct extension of your mood. It is humanities most common bond. It brings us all together.

Which is great and all, but sometimes you just want a god damned pie. And if you are Finn, you will beg to eat if for breakfast.

Seriously, it's gloomy outside. Just go make yourself a pie that reminds you of your Grandmama, and relax. All is well.

for the crust:

  • 1 1/4 cup crushed gingersnap cookies
  • 5 tablespoon unsalted butter
  • 1 tablespoon sugar
  • pinch of salt

for the filling:

  • 2 cups packed  cooked, riced sweet potato
  • 1 cup brown sugar
  • 3 eggs, beaten
  • 1 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • pinch of salt

for the topping:

  • large marshmallows, halved ( i didn't have time to make my own and used the good ol' fashioned store bought variety.  still pretty tasty)

Preheat 350 degrees.

To make the crust, melt and brown butter over medium heat, taking care not to burn it.  Set aside to cool.

In a medium sized bowl, combine cookies, sugar and salt.  Pour brown butter over crumbled cookies, and mix with a fork to combine.

Press into 9 inch pie pan. ( You will probably have a bit extra of the crust mixture. I did. ) Bake for 8 minutes.  Remove from oven and set aside to let cool.

To make the filling, whisk together eggs and brown sugar until combined and slightly thickened.  Add spices, salt, vanilla and slowly stream in milk, constantly whisking.  Add in sweet potato, and mix until thoroughly combined.

Pour into prepared crust and bake for 35-45 minutes.  The center of the pie should be set, you may test this with a knife.  Remove from oven.

Place marshmallows in a circular pattern around the top of the pie.  Place under the broiler until marshmallows are slightly melted and golden brown.
