jicama, mango, and graperuit salad

On the rare occasion that the two of us get to go out for dinner, we are always faced with the same dilemma. Where? Or more accurately, which one of us will win the battle this time. We have been together a long time, so we have gotten to a point of mutual agreements on such matters. Meaning, the losing party mumbles their displeasure with the outcome much quieter than when we were first together. This is love, people. Bask in the glow.

The funny thing about these scenarios is that we are fighting for is mostly a non-issue. If we really evaluate the things we want, the end result can come from either side winning. 90% of the time, we want to go a handful of places. She wants Mexican, I want Asian. Vietnamese or Thai, to be exact. So, we nit-pick until one of gives in, and we're off. But that's the thing, neither one us ever really loses. Even though they are so far removed from one another, the cuisines are very similar. There are so many ingredients that are totally interchangeable, that it is hard to tell the difference sometimes. I don't think either one of us could argue that all we really want is a meal that combines everything we love into one dish. Sweet, sour, salty, spicy, fresh and crunchy. These are all things that come to mind when I think of our respective choices. So, really, we don't have much to argue about, and not arguing is a good thing.

But, like I said, we don't get out much anyway. So, instead we will both eat this beautiful salad, and muse about the places we would be, if you would come over and watch our kids.

  • 1 jicama, grated
  • 1 mango, peeled and thinly sliced
  • 1 large grapefruit, peeled and sectioned
  • fresh basil, to taste
  • chopped, unsalted peanuts
  • 1 tablespoon neutral flavored oil
  • 1/4 cup fresh lime juice
  • 1 tablespoon honey
  • 1 teaspoon klass chili powder (it's actually a chili salt.  sold in most mexican groceries)

Combine lime juice, honey and chili salt. Whisk until well combined.

Assemble salad.  Jicama, mango and grapefruit.  Top with basil and peanuts.  Dress to taste. Enjoy!
