It's been over 40 degrees consistently for several days now. Pretty sure that in the midwest this qualifies as "patio weather". I don't think that anybody could deny that this is something worth celebrating. So, we created a cocktail for just such an occasion. Seasonally appropriate, and super refreshing. Not to mention, it's pink, so we even managed to squeeze in an Easter recipe for the week. Ok, maybe not really, but at the very least, it could make the egg hunt a little more interesting. So, go out and enjoy the sunshine, you deserve it.
for the rhubarb syrup:
- 2 1/2 cups rhubarb, sliced into 1/2 inch pieces
- 1 cup sugar
- 3 cups water
for the cocktail:
- 1/2 lime
- 2 oz vodka
- 3 oz rhubarb syrup
To make syrup, bring sugar, water and rhubarb to a simmer. Cook over medium heat until sugar is dissolved and rhubarb is soft. About 5 -10 minutes. Strain liquid through a fine mesh sieve, into a wide mouth jar and let cool. Refrigerate after cooled to room temperature.
Muddle half a lime, add 2 oz vodka and 3 oz syrup. Shake well with ice. Pour over ice and garnish with mint. Enjoy!
