grilled spiced chicken + red cabbage // rhubarb tostadas

We have discussed tacos on countless occasions. So much so, that we are certain you all are most definitely sick of them by now. So, let's change it up a bit......Tostadas! Ok, so maybe we've got a bit of a one track mind lately. Seriously though, can you blame us? It's like a giant nacho! Who wouldn't want a giant nacho? Especially when it's topped with Caribbean inspired grilled chicken, and assorted tangy & tasty freshness! Equal parts typical Cheesebrew fare, and unexpected ingredient-ness (I will do what I want, got it). This week, were totally cool with that.

 

for the chicken:

  • 1 1/2# boneless chicken
  • 1/4 cup orange juice
  • 2 garlic cloves, minced
  • 1 tsp soy sauce
  • 1 tsp habanero hot sauce (such as Yucateco)
  • 3 Tb. olive oil
  • 1/2 tsp cinnamon
  • 1 tsp kosher salt
  • 2 Tb. brown sugar

In a large pot, set up steamer basket with salted water. Steam chicken until just cooked through, about 25 minutes. Combine remaining ingredients in large bowl. Add chicken to bowl and let marinate 15-20 minutes. While chicken marinates, preheat grill. Grill chicken over med-high heat until evenly browned, and starting to crisp. Remove from heat, and let rest. When chicken is cool enough to handle, shred into bite sized pieces.

for the rhubarb & cabbage:

  • 3 cups rhubarb. chopped
  • 1/4 cup orange juice
  • 2 Tb. red wine vinegar
  • 1 tsp. kosher salt
  • 1 jalapeno. sliced (optional)
  • 1/2 med. red cabbage. shredded

In a sauce pan, combine orange juice, vinegar, salt, and jalapeno. Bring to a simmer, add rhubarb. Cook slowly until rhubarb is just soft. Remove from heat. Add rhubarb mixture to cabbage. Toss to combine.

 

For the tostadas (sure, you could use store bought ones, if you're into that)

  • corn tortillas
  • oil for frying

Heat oil in high walled skillet, to medium high. Cook tortillas, one at a time until golden, and crispy. Flipping once. About 2 minutes per side. Drain on paper towels.

Assemble tostadas with chicken, rhubarb mixture, and garnish with cilantro, fresh jalapeno, and salsa verde. Enjoy.
