green pea soup


Peas, are quite possibly the most polarizing of all the green vegetables. Kids either love em, or hate em. I have never really understood it though. What's not to love? Seriously! They are totally fun sized, kind of sweet, have a really cool color, and they pop in your mouth when you eat them! Not to mention, they are delicious!

Fortunately for us, our boys happen to be on the pro-pea side.  This soup is quick and easy, and at least in our house, was a kid pleaser (we added bacon for good measure).   If your kids don't happen to like peas, we don't know what to tell you.  Suppose you could just eat a bowl of bacon.  I'm sure that's something everyone can agree upon.


green pea soup

1/2 cup shallot, minced
1 cup dry white wine
2 bay leaves
6 cups green peas
4 cups chicken stock
olive oil
Kosher salt

bacon
 chive
crème fraîche or plain yogurt

In a large pot add a few tablespoons of olive oil and shallots over med/high. Cook until shallots are translucent and just beginning to brown. Careful not to burn. De-glaze with wine, scraping up any browned bits from the pan. Add bay leaf, and reduce wine by half. Add stock and peas, bring to a simmer for 8-10 minutes. Remove from heat. Working in batches blend in blender or food processor until desired consistency is reached. Be careful if the soup is still hot, it will be all over everything! Return to pot over low heat. Season to taste with salt and pepper. Serve immediately with bacon,chives, and  crème fraîche.
