 We certainly have our favorites in this house; familiarity is in constant rotation. Then, there are those that live a little further outside of our day to day. They are those things, that when they pop up, you find yourself saying "Oh, I am so glad you came to visit. It has been far too long". Or maybe, "Oooh you taste so good. I can't wait until I get to eat you again". Then you realize you're talking to food, and you get all weird and self conscious.

Banana bread gets this reaction just about every time. Especially when it is still warm from the oven. There is nothing quite like it! Then L had to go and add chocolate, coconut glaze, and peanuts into the mix! ¡Ay, caramba! Maybe, it is a good thing it doesn't come around too often, I am pretty sure it is doing something illegal. Enjoy this encounter while it lasts.

  •  1/2 cup butter, melted
  • 3/4 cup sugar
  • 2 eggs,  lightly beaten
  • 4 mashed bananas
  • 1 teaspoon baking soda
  • pinch of kosher salt
  • 1 1/2 cups all purpose flour
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup coconut milk
  • 2 tablespoons powdered sugar
  • 1/4 cup unsalted, roasted peanuts, finely chopped
Preheat oven to 350 degrees.  Grease 9x5 loaf pan. Set aside.

Combine butter and sugar in large mixing bowl.  Stir to combine with wooden spoon. Add eggs and stir until well mixed.  Add banana. Next add baking soda, salt and flour.  Mix until just combined. 
 Fold in chocolate chips.  Place in loaf pan and bake for about 1 hour. (check at 55 minutes-test with a toothpick.  When it's clean, you're done!)

Meanwhile, combine coconut milk and powdered sugar for glaze.  

Remove from loaf pan after 5-10 minutes.  Place on cooling rack. Poke holes in the top of the banana bread with a toothpick.  Drizzle coconut milk glaze over the bread. Top with chopped peanuts.  Enjoy!
