black bean burgers


Before we go any further, there are a few things to point out here. Firstly, yes, we called this a burger, despite my disdain for using such words to describe something of the non-meat persuasion. Secondly, yes, we do realize that we are adding to what has be an immeasurable number of recipes that seem similar to the one we have here. However, upon consuming this creation, neither of these things mattered. A burger is what it is. And this recipe is so damn good, it needed to be shared.

Often times, people add so many components into the mix, that the end result is more of a gloppy mess, than it is a burger. Not these though! Ours are simple in their makeup, with no unnecessary ingredients. They are anything but gloppy. Add on the perfect accoutrements, and lunch is served.

(makes four burgers)

for the burgers:

  • 1 can organic black beans, rinsed and well drained
  • 1/2 small onion, minced
  • 2 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon soy sauce
  • 1/2 cup panko
  • 1/4 cup feta (this could be left out if you want these to be vegan)
  • 1/4 cup cilantro, chopped
  • 1/2 teaspoon cumin
  • olive oil

for the toppings:

  • 2 avocados, smashed
  • 1 lime
  • 4 jalapenos
  • plain greek yogurt
  • cholula, to taste
  • cilantro

Preheat  oven to 400 degrees.

Split jalapenos lengthwise.  Scrape out seeds with a spoon.  Drizzle with olive oil and roast until softened.  10-15 minutes.  Set aside.

In a medium bowl, smash black beans with teaspoon of soy.  Set aside.

In a large bowl, combine onion, garlic, tomato paste, panko, feta, cilantro and cumin.  Add black bean mixture.  Mix with your hands until well combined.  Divide into four equal portions and make into patties.

Heat a few tablespoons of oil in saute pan over medium heat.   Place patties in pan and cook until browned on each side (about 1 minute).  Remove from pan and cover.

Add lime juice and salt tt to smashed avocado.

Combine greek yogurt and cholula to your personal taste.

Assemble burger.  Bun of your choice, smashed avocado, black bean burger, spicy yogurt, roasted jalapeno.
